every saturday we make a batch of pancakes - we enjoy them for breakfast and then freeze the leftovers so that we can eat them throughout the week. i don't think we have used the same "recipe" twice. we almost always add pureed fruit and/or veggies to a just-add-water pancake mix. some of our favorites: beets & cantaloupe and carrots & bananas. i have experimented with multi-grain mixes, but they usually don't fly in our house. today we tried something new - and loved it! we decided to call them "smoothie pancakes" because we made the batter in the blender and it looked just like a smoothie. yum.
1 1/2 cups of blueberries (frozen or fresh)
1 - 2 bananas
1 egg
1/3 c milk
1/3 c water
blend in the blender until smooth
add 1 heaping cup of pancake mix
blend until smooth
add water/milk to desired consistency
cook on a griddle as you would normal pancakes.
all measurements are eye-balled!
